Each guide explains what to do, why it works and how to recover when a loaf does not turn out. A small number of equipment roundups and reviews are research-based, using specifications, manufacturer information and patterns in owner reports, rather than hands-on lab tests. The site is new, so articles will appear gradually as each topic area is filled in.

How the site is organized

Bread is grouped into six topic areas, each with its own page that introduces the main sub-topics and lists articles as they are published. The order below is the order used in the site navigation.

Sourdough

Where to begin

If you are brand new to baking, the Bread Basics area is a gentle place to learn how dough behaves before you pick a recipe. If you already know what you want to bake, go straight to the topic area that matches it and browse the sub-topics listed there. If something went wrong with a loaf, Bread Basics and Sourdough both include troubleshooting for dense, gummy and unrisen bread.
